The dough is made with real pumpkin, pumpkin spice, and espresso, the center is an espresso white chocolate ganache, and the top is a latte foam icing made from a fresh-pulled espresso shot, pumpkin spice, and nutmeg. I made this cookie to both mock the seasonal drink and to honor the season.
