The Dark Half

The equinox has passed, and the dark gains a few minutes every evening. Here is the October lineup.

Hedge Witch. Black cocoa dough with rosemary, around a center of blackberry jam I made from berries I picked. Irish folklore says the púca spoils the blackberries after October 31.

The Thin Veil. Barmbrack was the fortune bread of Samhain, baked with a ring or a coin hidden inside. This one is built on tea-soaked fruit and a black tea caramel.

Rose & Ash. Black sesame dough with a tea honey custard interior and a rose hip cream on top. Rose hips are the fruit left after the petals fall.

Tarte Tatin. I used to pick apples every fall with my children and spend days canning them. The center is a mix of apple varieties cooked down until they caramelize.

Maple Pecan. I once tapped my own trees in Wisconsin, where forty gallons of sap made one gallon of syrup. The center is a maple caramel encircled by a maple pecan dough.

Pumpkin Spice Latte. The drink went twelve years without any pumpkin in it. This cookie has real pumpkin in the dough, and espresso ganache in the center. I made it to mock and honor the seasonal drink.
