After icing hundreds of red velvet cupcakes in one exhausting stretch years ago, I swore I would never touch red velvet again. This version exists because enough time passed, and I finally felt up to it again. The pistachio chocolate cookie comes from a different place entirely—summer experimentation and the pull toward desserts that feel rich.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThese cookies aren’t meant to perform romance.
